Combine a fresh vegetable rice with a creamy Tuscan salmon in garlic cream. The surprising mix of flavors will ensure that the garlic will elevate the vegetables of the rice and the juicy tenderness of the salmon will lead this dish of rich flavors balanced with a creamy and enveloping texture.

Step 1- Gear Up
Preheat the oven to 180 degrees Celsius.
Cut the tomatoes.
Step 2- Bake the Salmon
on an oven tray (with Aluminium foil or baking sheet base on the base) add the salmon fillet (skin side up) and bake until salmon is fully cooked (tender meat inside). Remove and keep warm on the side.
Step 3- Flavour it Up
On a fry pan over medium heat add olive oil, the garlic and stir for few second. Add the tomatoes, spinach and keep stirring until spinach becomes soft. Add the sauce, salt and pepper if desired. Once the sauce boils, add the baked salmon to the pan and cook until sauce becomes thick.
Step 4- Cook the Rice
On another fry pan cook the rice until hot (or microwave it).
Step 5- Serve your Dish
Serve the salmon with the rice and lemon wedges on the side. Enjoy!!
