Step 1- Gear Up
Stuff the vegetables with the rice mix.
Step 2- Caramelize the Onions
In a deep cooking pot over a medium heat, add (1) tablespoon (TBSP) of corn oil, the sliced onion and stir for (2) minutes or until onion is caramelized.
Step 3- Cook the Meat
Add the meat to the same pan, then add (2) cups of room temp. water, and reduce the heat to low, then add a pinch of salt and pepper. Cook the meat for (3) minutes or until fully cooked (soft and tender). Remove from the heat and keep warm.
Step 4- Cook the stuffed Vegetables
Arrange the stuffed vegetables in a new deep pot over a medium heat. Add the stock over the stuffed vegetables and cook for (5) minutes then reduce the heat to low and keep cooking for more (5) minutes until fully cooked (tender vegetables). Remove from the heat and keep warm.
Step 5- Prepare the Soup
In a new pot, boil the soup over a medium-high heat. Remove and keep warm.
Step 6- Serve the Iftar
On the serving plates, place the stuffed vegetables and the meat as a side. Start with the soup.
