Step 1- Gear Up
Preheat the oven to 180 degrees Celsius.
Chop the tomato
Slice the zucchini
Step 2- Bake the Zucchini
on an oven tray (with Aluminium foil or baking sheet base on the oven tray) add the zucchini and spread the parmesan cheese at the top. Bake until the zucchini is tender and golden brown color.
step 3- Cook the Seafood
On a fry pan over medium heat add olive oil, butter, garlic. Add the seafood and sauté, then add the chopped tomatoes, salt and pepper and keep sautéing until the seafood is cooked. Add fresh parsley and squeeze a lemon. Remove from the heat and keep warm.
Step 4- Cook the Rice
In another fry pan over medium heat cook the rice until hot (or microwave it).
Step 5- Serve your Dish
Serve the seafood with the rice and parmesan zucchini on the side.
