No matter what you’ve been through all week, it can all just fade away with a perfect plate of Risotto. This naturally creamy and flavorful dish is the perfect marriage of rice, chicken, and even more chicken with a touch of parmesan, and only a fraction of the effort.

Step 1 – Gear Up
Melt the butter, olive oil in a large pan over medium-high heat. The pan should preferably be low and wide, but other pans work as well. Toss the onions and a whole garlic clove and fry until the onion softened in few seconds.
Step 2 – Fry the Risotto
Add in the rice and fry until the butter is absorbed by the rice in about (2) Minutes.
Step 3 – Add the protein
Reduce the heat to medium-low and remove the garlic cloves. Add the pre-marinated chicken breast pieces.
Step 4 – Flavour it up
Add the Chicken stock to the pan and bring it to a slow simmer (boiling slowly) on a medium-low heat. Season by the salt and pepper if desired. Reduce the heat to low and stir once. Then do not stir again until fully cooked in about (5) Minutes or until al dente (slightly firm to the bite).
Step 5 – Italianise with the cheese
Remove the pan from the heat and mix with Parmesan cheese, 1 cube of butter and chopped Parsley.
Step 6 – Time to Eat
Place the perfect Risotto in a bowl and celebrate!
