Step 1- Gear UP

Chop the green onion and crush the peanuts.

Step 2- Prepare your Salad

In a large pot, place the potatoes with (1/2) litre of room temp. water. Add a pinch of salt. and boil for (10) minutes. Add the green beans and keep boiling for (5) more minutes or until the vegetables are soft and tender.

 

Remove the pot from the heat, and drain the water, then set aside to cool to room temp. (essential).

 

Transfer the vegetables to a mixing bowl and toss the salad dressing and (½) the amount of the chopped green onion. Mix well.

Step 3- Prepare the fish coat

Grind the crushed peanuts with a pinch of salt, and the remaining chopped green onion. Cover the fish fillet with the grinded mix.

Step 4- Cook your Fish

On a frying pan over a medium-high heat, add (2) tablespoonful (TBSP) of olive oil, and (2) tablespoonful (TBSP) of corn oil. Place your fish into the pan and cook for (3) minutes on each side or until golden brown with white meat inside. Once the fish is cooked, drizzle with some lemon juice. Add the sauce on the top of your fish.

Step 5- Serve your Dish

On a serving plate, place the fish fillet with the salad on the side. Enjoy!!
