Step 1- Gear Up

Preheat the oven to 180 degrees Celsius.

Chop the garlic

Chop the tomato

Step 2- Bake the Fish Fillet

On an oven tray (with Aluminium foil or baking sheet base on the oven tray) add the fish fillet and bake until fully cooked (tender white meat inside). Remove and keep warm.

Step 3- Prepare the Sauce

On a fry pan over medium heat add corn oil, chopped garlic and tomato, stir until tomatoes soften, then add the sauce.  Add salt and pepper. Keep cooking until sauce is thick. Remove from the heat and keep warm.

Step 4- Cook the Rice

On other fry pan over medium heat cook the rice until hot (Or microwave it).

Step 5- Serve your Dish

On a serving plate add the fish then spread the sauce on top and rice on the side with lemon wedges.
